The Recipe:
Chicken Bracciole
9 Roma tomatoes
2 Red bell peppers
2 Chicken breasts, about 8oz each
1oz Fresh basil
1 Head of garlic
Salt & pepper to taste
1 cup White wine
1/4 cup Extra virgin olive oil
The Method:
Pound the chicken breasts thin and layer with roasted red peppers. Season with salt and pepper and roll; secure with toothpicks. Grilled for few minutes on both sides and the we finished in the oven.
For the sauce, sliced the garlic and sautee in extra virgin olive oil until golden brown. Chop the tomatoes and add it to the garlic and season with salt, pepper and fresh basil. Let simmer for about 10 minutes.
Cook our pasta in salted boiling water according to directions on box. Mix with the sauce. Slice the chicken rolls a set them over the pasta.
